  • 300 g pasta penne or fettuccine
  • Salt for boiling water
  • Sausage & Sauce
  • 400 g Italian sausage
  • 2 tbsp olive oil
  • 4 garlic cloves minced
  • ½ onion optional
  • ½ cup sun-dried tomatoes
  • 1 cup heavy cream
  • ½ cup parmesan cheese
  • ½ cup chicken broth or pasta water
  • Greens
  • 2 cups fresh spinach
  • Salt & pepper
  • 1 tsp Italian seasoning
  • Chili flakes optional

Equipment

  • 1 Large deep skillet or sauté pan used for cooking sausage and preparing the creamy sauce in one pan
  • 1 Large Pot used for boiling pasta until al dente
  • 1 Colander or strainer used for draining cooked pasta
  • 1 Sharp Knife used for slicing sausage and chopping garlic or onion
  • 1 Cutting Board used as a safe surface for all prep work
  • 1 Wooden Spoon or Spatula used for stirring sauce and mixing pasta evenly

Method
 

  1. Cook pasta until al dente.
  2. Brown sausage in pan.
  3. Sauté garlic and onion.
  4. Add sun-dried tomatoes.
  5. Pour in cream and broth.
  6. Stir in parmesan and spinach.
  7. Add pasta and sausage.
  8. Mix and serve hot.

Notes

For the best Creamy Tuscan Sausage Pasta, use freshly grated Parmesan cheese whenever possible, as it melts more smoothly and provides a richer flavor than pre-shredded varieties. Be careful not to overcook the spinach, adding it just long enough to wilt while preserving its color and freshness. If the sauce becomes too thick, stir in a little reserved pasta water to achieve a silky, restaurant-style consistency. This pasta is best served immediately after cooking, when the sauce is at its creamiest and perfectly coats every bite.
