  • 8 large eggs
  • 2 tbsp milk
  • ½ tsp salt
  • ¼ tsp black pepper
  • Mix-Ins
  • 1 cup shredded cheddar cheese
  • ½ cup diced bell peppers
  • ¼ cup sliced green onions
  • Optional
  • ½ cup cooked bacon or sausage

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Grease a 12-cup muffin tin.
  3. Mix hash browns, oil, salt, and pepper.
  4. Press into muffin cups to form shells.
  5. Bake for 20 minutes until crispy.
  6. Whisk eggs, milk, salt, and pepper.
  7. Add cheese and vegetables to cups.
  8. Pour egg mixture into each cup.
  9. Bake for 12–15 minutes until eggs are set.
  10. Cool slightly and serve.

Notes

Dry the hash browns thoroughly before baking to remove excess moisture and help them become extra crispy. For the best texture, always pre-bake the hash brown crust before adding the filling, as this creates a golden, crunchy base.
