High Protein Chicken Burrito Bowl

Ingredients
  

  • 2 chicken breasts
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 tbsp garlic powder
  • Salt and pepper to taste
  • 1 cup cooked rice (white or brown)
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 ripe avocado sliced
  • 1 cup salsa or pico de gallo
  • 2 tbsp sour cream
  • Fresh cilantro and lime to garnish

Method
 

  1. Season chicken breasts on both sides with cumin, chili powder, garlic powder, salt, and pepper.
  2. Heat a grill pan or skillet over medium-high heat. Cook chicken for 6–7 minutes per side until fully cooked.
  3. Transfer chicken to a cutting board and let rest for 5 minutes before slicing thinly.
  4. Warm black beans and corn together in a saucepan over medium heat for 3–4 minutes.
  5. Divide cooked rice between serving bowls.
  6. Arrange sliced chicken, black beans, corn, avocado, and salsa in sections over the rice.
  7. Add sour cream on top and garnish with fresh cilantro and lime juice.
  8. Serve immediately while warm.

Notes

For extra flavor, marinate chicken in lime juice and spices for 30 minutes before cooking. Store avocado separately during meal prep to keep it fresh longer.
