Notes

Use fresh lemon juice whenever possible, as it provides a brighter and more vibrant flavor than bottled alternatives. This Mediterranean Couscous Lunch Bowl is delicious served either warm or chilled, making it a versatile option for lunches and meal prep. If preparing it ahead of time, store the dressing separately and add it just before serving to keep the vegetables fresh and the couscous from becoming soggy. For a more filling meal, add grilled chicken or chickpeas to boost the protein content while complementing the Mediterranean flavors perfectly.
