  • pounds boneless skinless chicken breast
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp ginger powder
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 cups cooked jasmine rice
  • 1 cup shredded carrots
  • 1 cup shredded red cabbage
  • 1 cucumber sliced
  • 1 red bell pepper sliced
  • 2 green onions sliced
  • 2 tbsp chopped peanuts
  • Fresh cilantro
  • cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 garlic clove minced
  • 2 –3 tbsp warm water

  • 1 Large Skillet Used to cook the chicken until golden and fully cooked.
  • 1 Medium Cooking Pot Used to prepare the rice.
  • 1 Large Mixing Bowl Used for seasoning the chicken.
  • 1 Small Bowl Used to prepare the peanut sauce.
  • 1 Knife Used to slice vegetables.
  • 1 Cutting Board Used as a preparation surface.
  • 1 Measuring Cups Used to measure ingredients.
  • 1 Measuring Spoons Used to measure sauce ingredients.
  • 1 Wooden Spoon or Spatula Used for stirring and cooking.
  • 4 Serving Bowls Used to assemble and serve the bowls.

Method
 

  1. Cook jasmine rice according to package instructions.
  2. Season chicken with spices.
  3. Cook chicken until golden and fully cooked.
  4. Whisk together peanut sauce ingredients.
  5. Thin sauce with warm water as needed.
  6. Divide rice among serving bowls.
  7. Add chicken and vegetables.
  8. Drizzle with peanut sauce.
  9. Garnish with peanuts and cilantro.
  10. Serve immediately.

Notes

Fresh lime juice provides the best flavor, adding a bright and refreshing citrus note that enhances the overall dish. If you're preparing it ahead of time, store the sauce separately and add it just before serving to maintain the best texture and freshness.
