  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 tsp brown sugar
  • 2 garlic cloves minced
  • ½ tsp black pepper
  • Bowl
  • 8 oz rice vermicelli noodles
  • 1 cup shredded carrots
  • 1 cucumber julienned
  • 1 cup shredded lettuce
  • ½ cup bean sprouts
  • ¼ cup mint leaves
  • ¼ cup cilantro
  • 2 tbsp chopped peanuts
  • Dressing
  • 3 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 garlic clove minced
  • 2 tbsp water

  • 1 Large Cooking Pot Used to cook the rice vermicelli noodles.
  • 1 Large Mixing Bowl Used to marinate the chicken.
  • 1 Small Bowl Used to prepare the dressing.
  • 1 Skillet or Grill Pan Used to cook the chicken.
  • 1 Knife Used to slice vegetables and chicken.
  • 1 Cutting Board Used as a preparation surface.
  • 1  Colander Used to drain noodles.
  • 1 Measuring Cups Used to measure ingredients.
  • 1 Measuring Spoons Used to measure dressing ingredients.
  • 1 Serving Bowls Used to assemble and serve the bowls.

Method
 

  1. Marinate chicken with sauce ingredients.
  2. Cook noodles and rinse under cold water.
  3. Cook chicken until fully done.
  4. Allow chicken to rest and slice.
  5. Whisk together dressing ingredients.
  6. Divide noodles among bowls.
  7. Add vegetables and herbs.
  8. Top with sliced chicken.
  9. Drizzle with dressing.
  10. Garnish with peanuts and serve.

Notes

Fresh herbs provide the best flavor, adding a vibrant aroma and freshness that elevates the entire dish. For meal prep, it’s best to store the dressing separately and mix it in just before serving to keep the ingredients crisp and flavorful. If using peanuts, add them right before serving to maintain their crunch and texture.
